Ingredients

1.3 kg (2.8 lbs) greater amberjack, cut into steaks

  • 2 cans of chopped tomatoes
  • 1 handful of salt-packed capers, rinsed and squeezed
  • Flat-leaf parsley, chopped
  • 2 cloves of garlic, thinly sliced
  • Extra virgin olive oil
  • Salt

Method:

  1. Sauté garlic and parsley stems in extra virgin olive oil over low heat.
  2. When the garlic turns lightly golden, remove the parsley stems and add the chopped tomatoes. Crush them with a wooden spoon.
  3. Add a small pinch of salt, cover, and simmer on low heat for 10 minutes. Then uncover and let the sauce reduce.
  4. Place the fish steaks into the sauce, add the capers, and cook gently until the flesh changes color from the bottom up.
  5. Flip the fillets and cook for another 2-3 minutes.
  6. Turn off the heat and sprinkle with chopped parsley.
